Caramelized Sunion® Flatbread


  • 3 tbsp of butter
  • 3-4 Sunions, sliced
  • 8 oz frozen puff pastry (defrost in fridge)
  • 2 oz chilled Brie cheese, diced with rind removed
  • 2 oz Gorgonzola cheese, diced
  • 2 tbsp fresh tarragon, chopped


  1. Preheat oven to 400°.
  2. Melt butter in pan on medium-high heat. 
  3. Add sliced Sunions and cook until reduced and caramelized -- approximately 25 minutes, stirring occasionally. Do not let them burn. Set aside.
  4. Roll pastry into a 9x9 square on a baking sheet lined with parchment paper. Prick with fork to prevent the pastry from forming bubbles while baking.
  5. Spread Sunions over pastry, leaving a half inch of pastry exposed around the edges. Dot with cheeses. Sprinkle with tarragon.
  6. Bake in preheated oven at 400° for 18-20 minutes or until cheese has melted and pastry is crispy. Let cool for 5 minutes. Refrigerate if not baking immediately.
