Sunions Pickled Onion Salad

Ingredients

Pickled Sunions

  • 1 thinly sliced Sunion
  • 4 cups water
  • 1¼ cup rice wine vinegar
  • 1 teaspoon sugar
  • 3/4 teaspoon salt
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon whole pink peppercorns
  • 2 bay leaves
  • 1 teaspoon mustard seeds
  • 1 teaspoon coriander seeds

Pickled Onion Salad with Blue Cheese & Bacon

  • Spinach 
  • Bacon 
  • Blue cheese 
  • Cranberries 

Directions

Pickled Sunions

Bring water to boil. In jar combine vinegar, sugar, salt, and spices and set aside. Blanch Sunion over a colander before adding to jar and let sit for 30 minutes.

Pickled Onion Salad with Blue Cheese & Bacon

Combine chopped bacon, blue cheese, cranberries, and as many pickled onions as you’d like over a bed of spinach. Season with salt and pepper and toss with a vinaigrette.
